Quail egg shooters. These are done right and exceed expectations. I've had quail egg shooters all over the country, and these are the definition. Served in the shell, with the creamy yolk partially exposed under a few drops of ponzu, a dusting of tobiko, and a pinch of green onion. The creamy yolk takes the spot light of flavor, with the ponzu providing the salt and deeper tones. The tobiko and scallions coming along for texture. A perfectly composed treat and delightful presentation!
